Spicy Black Bean and Avocado Nachos



Nachos are one of my all-time favorite foods and I'm not ashamed to admit it. They're delicious. Plain old cheese and tortilla chip nachos will always be at the top of the list for my, but spicy black bean nachos are my favorite. Recipe is below! 


Spicy Black Bean and Avocado Nachos
Serves 1-2

INGREDIENTS
1/4-1/3 bag quality tortilla chips  
1 cup pepperjack cheese
1/2 cup black beans
1/2 avocado, cubed
1/2 lime
Chili powder, to taste
Cumin, to taste


Preheat oven to 400 degrees. Line a small to medium cookie sheet with tortilla chips in a single layer. Sprinkle with pepperjack. Top with black beans and sprinkle with chili powder and cumin. Bake for 5 minutes or until cheese is full melted. (I sometimes broil for a minute too to make the cheese nice and brown.) Remove from oven. Use a spatula to move onto plates. Top with avocado cubes, fresh squeezed lime, and another sprinkle of chili powder.
