10 Amazing Vegetarian Recipes // Bubby and Bean

My regular readers know that I am not the queen of cooking.  I'm not very good at it, I make huge messes, and I just don't have the patience to see cooking projects through to the end like I do design projects.  My husband is (thankfully) an amazing chef, but when he's on the road with the band, I live on a diet of salad, take-out, and Amy's Organics frozen dinners. 

Lately however, I've felt a strange pull to give this whole cooking thing another chance.  Maybe it's because fall is around the corner and having a kitchen full of pots brewing and yummy smells just goes well with cooler weather.  Or maybe it's because I have a baby on the way, and this whole nesting things that comes along with that inherently includes cooking meals.  Whatever the reason, I've found myself paying a lot more attention to recipes I stumble upon online, and feeling more inclined than ever to try to create them myself. 

I've been a vegetarian for almost 25 years, and it's amazing how far veggie recipes have come.  These 10 in particular stood out to me as looking especially delicious, and I plan to try out all of them in the coming weeks.  I just need to decide which one to do first.  Which ones look the best to you?

  5. I've been taking a break from cooking for a while. I have never really loved cooking either but would still do it most nights because eating take out or prepared stuff is expensive when you're on a tight budget, especially if you want to eat healthy. But since we've been so busy with the house and work, etc. I've taken a leave of absence from the kitchen for most of the past year. I don't miss cooking at all really...but soon enough I will probably pick it back up again, and these recipes all look pretty good! :)

  7. It really is amazing how far vegetarian recipes have come, isn't it? I've only been vegetarian for four and a half years, but when I moved to France, it was like going back in vegetarian-time, if that makes sense... everything vegetarian is still a slab of tofu or seitan to replace meat with vegetables and potatoes on the side. Or salad. In that way, I feel very lucky to be home! I'm not much of a cook, either - I have about three recipes I do well - so I can sympathise with your diet with your husband is away. My husband works as a chef, so when he does cook, its wonderful, but most evenings, he's at a restaurant cooking for other people while I fend for myself :)

  9. I love all of these recipes, especially the avocado fries. I'm going to have to try that. I love cooking and I usually try to eat home cooked food over anything else.

  12. How I LOVE this post... all of these vegetarian recipes look absolutely amazing. Not to mention, I've been dying to try Avocado fries. I'm pretty sure they'll be my new addiction! ;)

  15. I'm not technically a vegetarian, but I sure don't miss meat when it isn't there! And as you know, I'm no master of the kitchen, either. :-) There are so many other things I'd rather be doing, but I make myself cook anyway because it's healthier. I bet the baby loves that you're branching out!

  16. These look so delicious! I have been a vegetarian almost 20 years now but more recently gluten free due to a sensitivity. What a challenge this has been. Luckily we have Pinterest today for so many kitchen idea. I love the looks of that corn dish!
