There is little I love in life more than Mexican food. You guys already know that I have a slightly unhealthy obsession (and I never use that word) with tacos, but Mexican food in general is my culinary spirit animal. We eat some version of it at least two to three times a week, often more. But I find that we tend to get stuck in the same rotation of dishes - tacos (obviously), burritos, and some form of huevos rancheros, depending on what ingredients are in the fridge. Recently I experimented with a Mexican casserole recipe and I'll just come right out and brag about the fact that it was damn good, guys. This breaking out of the Mexican food mold inspired me to start searching out other Mexican-inspired (authentic or otherwise) recipes, and boy howdy did I come across some goodies. And naturally, I had to share some of my favorite finds with you, hence the topic of this edition of 10 Great. Because I'm veg, these are all vegetarian based dishes, but you could easily incorporate meat into most of them as well.
I'll venture to guess that the majority of you like Mexican food too (because really, who doesn't?), so I'd love to hear about any recipes or dishes you particularly love. Maybe I'll stockpile enough that I could eventually eat Mexican food every day of the week. Now that sounds like a dream come true.
