Veggie Oven Nachos


Vegetarian Oven Nachos

This is a favorite meal for everyone in our house! They're so simple to make, and easy to customize to everyone's taste.

Vegetarian Oven Nachos

Serves 2-4

INGREDIENTS
1/2 bag tortilla chips 
1 can black beans 
5 cups shredded cheese
3/4 tsp chili powder 
1/4 tsp cumin 
1/4 tsp garlic powder 
1/2 teaspoon salt 
1-1/2 cups thick salsa
1 fresh jalapeño, sliced 
1/2 avocado, cubed 
lime

Preheat over to 400 degrees. Rinse and drain black beans. In a bowl, mix chili powder, cumin, garlic powder, and salt. Add a single layer of tortilla chips on a baking sheet, then spread beans evenly on top. Cover with cheese and sprinkle with spice mixture. Bake for 5 to 6 minutes, until cheese is melted. Top salsa, avocado, and jalapeño slices for a kick. Squeeze on a little lime and serve.
