I remember being slightly repulsed by avocados as a child, although part of me wonders if that's only because we ate them so often.  (Like most children, anything I was 'forced' to eat turned into something I rebelled against eating).  A huge shift occurred in me when I went off to college, however, and now the great green fruit (yep, it's a fruit!) holds a permanent place in my top five favorite foods.  I regularly eat avocados in salads, in smoothies, with eggs, on toast, in burritos and wraps, and by themselves. I am fairly certain that guacamole is the best recipe invention of all time.  And in the summertime, the avocado is queen in my house.  I've been looking up a whole lot of recipes that incorporate avocados to use in our summer meals lately, so for this edition of 10 Great, I thought I'd share some of my favorite finds with you.  I've tried a couple of these already, and can't wait to make more of them in the coming weeks.

  3. I didn't like avocado when I was younger either. A few years back I ordered a wrap that came with avocado (unknowingly) and I was surprised I like it! Now I'm a guacamole addict!
    That club looks great! And I never would have thought to pair it with chocolate!

  5. Avacados are one my faves too! Wendy's had this salad last year: a salad with chili on top, with a huge dallop of guacamole over it. I know it sounds like the weirdest combination ever but all the different textures taste amazing and I love making it now.

  7. Yum! I love adding avocado to almost everything. I love mixing it with spring onions and blue cheese. That one a piece of toast, is delicious.

  11. I honestly don't know how I would live without avocado. Guacamole is my preferred variation but I also love to make avocado and goat cheese grilled cheese sandwiches with fresh basil... so delicious!

  14. Yum! I can't decide which to try first. I just made an avocado and sun dried tomato toast last weekend and it was so rich and creamy!

  17. Hey Melissa, these recipes look amazing, so delicious! I love to eat avocado, but I haven't tried a sweet recipe with avocados, but I think I'll try one soon :) Nice photos! I also started love to eat avocados when I was a teenager. But now I eat them whenever I can ;) Best, Luu

  18. Want to start your day off with a healthy breakfast that will carry you through most of the day? Simple: Take an avocado and halve it. Take out the pit and enlarge the hole slightly. Crack an egg into the hole and sprinkle with a little sea salt and pepper. Place in the oven at 350 for 15-20 minutes until the egg is how you like it. Remove from the oven and top with a little feta cheese and chives. This will keep you full for most of the day and it's so healthy.

  22. Thank you so much for the avocado inspiration! I too did not grow up eating avocado, and am trying to make up for lost time! (I think just the word "guacamole" sounded too weird to me and turned me off...so sad!) I'm looking forward to trying some of these recipes soon!
