Springtime Lemonade Mimosas


Lemonade Mimosas


You guys! Spring officially begins in five days. FIVE DAYS. Sorry to shout at you, but seriously, I am so excited. Winters in Chicagoland drag on and on, and even though it will be a while before we actually have what I consider to be truly pleasant weather, the first few weeks of spring bring feelings of hope and positivity and all kinds of good stuff. I mean, who isn't stoked to see that first tulip or daffodil poking up through the ground? It means that sunshine and green trees and outdoor gatherings and sandals and sundresses and all of the beauty of the season are right around the corner.

One of my favorite parts of this time of year is finding simple ways to celebrate springtime with friends and family. My daughter and I have already put together a couple of spring-themed flower arrangements in honor of the season, and the egg dying (with which I admittedly sometimes go overboard with design-wise) will begin sooner than later. And when it comes to adult springtime celebrations, I love inviting a couple of girlfriends over to hang out and talk over my favorite spring cocktail - lemonade mimosas. I've shared several mimosa recipes here before (because duh, mimosas!), but this one is probably at the top of my list for spring and summer. The combination of fresh squeezed homemade lemonade with VOVETI Prosecco and a hint of mint is incredibly refreshing, and just oozes springtime to me.


This recipe makes enough for 6-10 cocktails, depending on the size of your glasses.

INGREDIENTS
1 bottle VOVETI prosecco
4 cups water
1 cup sugar
lemons (enough for 1-1/2 to 2 cups of lemon juice)
lemons (for garnish)
fresh mint (for garnish)
course sugar (for rim)

DIRECTIONS
Combine the cup of sugar with 1 cup of water in a small saucepan. Bring to boil and stir until dissolved. Allow the syrup to cool, then chill in the refrigerator.

Juice your lemons, making sure to remove all seeds. In a pitcher, stir together the lemon juice, the chilled syrup, and the remaining 3 cups of water.

Use lemon juice or water to wet rims of glasses and dip each rim into the course sugar. Fill glasses about half way full with lemonade. Top with VOVETI prosecco, and garnish each glassed with a lemon slice and sprig of fresh mint.


I am telling you guys, these mimosas are so good, and the perfect way to celebrate spring - whether you're casually entertaining friends or just enjoying the season by yourself. You can also use store bought lemonade if you're in a pinch, but there is something delightfully spring-y about making it from scratch. I also love using VOVETI Prosecco in these cocktails because it has such a deliciously fruity flavor (with the perfect balance of light foam and sparkle), and because it is such a high quality, craft prosecco (only 15,000 cases are produced annually). Another thing I like about VOVETI is the fact that it is simultaneously upscale and affordable, making it perfect for everyday pairing or chic entertaining with friends.
